Chicken thighs mediterranean
Ingredients
Serves: 4
1 teaspoon olive oil
1 1/2 cups sliced onion
1 tablespoon minced garlic
1 green bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
10 whole nicoise olives or 5 pitted black olives, chopped
1/4 teaspoon fennel seeds
1/8 teaspoon dried rosemary
1/8 teaspoon dried thyme
Pinch of red pepper flakes
1 1/4 pounds boneless, skinless chicken thighs
2 teaspoons red wine vinegar
1/8 teaspoon ground black pepper
Directions
Preheat the oven to 425°F.
In a large, nonstick skillet, heat the oil over medium heat. Add the onion and garlic. Cook, stirring frequently, for 4 to 5 minutes, or till the onion is translucent.
Add the bell peppers. Cook, stirring frequently, for 5 to 6 minutes, or till softened. Add the olives, fennel, rosemary, thyme, and red pepper flakes. Cook, stirring, for 1 minute longer.
Place the chicken in a shallow baking dish and arrange in a single layer. Drizzle with the vinegar and sprinkle with the black pepper. Spoon the vegetable mixture over the chicken.
Bake for 25 to 30 minutes, or till the chicken is no longer pink in the center and the juices run clear.
